Guidelines for the Development of Gastronomy Tourism Route,Case Study Khlong Damnoen Saduak, Damnoen Saduak,Ratchaburi Province

Abstract

The purposes of the study on guidelines for the development of gastronomy tourism route, case study of Khlong Damnoen Saduak, Damnoen Saduak, Ratchaburi Province wrer to study tourist attractions and restaurants, to propose ways of development gastronomy tourist route within Damnoen Saduak,and to find the guidelines for the development of gastronomy tourism route. In a qualitative study through observation, in-depth interviews and focus group discussion with 30 keys informants, divided into 3 groups: Government officials, community leaders, politicians, entrepreneur, travel administrator and Thai tourists.

The study indicates that on both sides of Khlong Damnoen Saduak, Damnoen Saduak, Ratchaburi Province from milestone No. 5 to 8 are concrete roads and 3 concrete bridges on the banks on the canal. There are several of tourist attractions, activities, events, festivals, that are held throughout the year for tourists to enjoy such as Phra Trai Rat Rojanarit Buddha float festival, Annual ceremony of Wat Rat Charoen Tam, sweet grapes contest festival, Remembrance of His Majesty King Rama 5’s royal visit, because of the amount of shrines and high amount of Chinese population.Guidelines for the development of gastronomy tourism route were supports developments on restaurant to fit hygienic standards and responses to the needs of tourists. Entrepreneurs, travel administrator and Thai tourists, seek knowledge from tourism agencies and community development department for villagers to understand and cooperate in tourism, products, and service developments in order to sustain the economy in the community as well as environmental and safety control.

การศึกษาเรื่องแนวทางการพัฒนาเส้นทางการท่องเที่ยวเชิงอาหาร กรณีศึกษาคลองดำเนินสะดวก อำเภอดำเนินสะดวก จังหวัดราชบุรี มีวัตถุประสงค์ เพื่อศึกษาสถานที่ท่องเที่ยว รูปแบบของร้านอาหารที่เปิดให้บริการ ภายในอำเภอดำเนินสะดวก และนำเสนอแนวทางในการพัฒนาเส้นทางการท่องเที่ยวเชิงอาหาร อำเภอดำเนินสะดวก จังหวัดราชบุรี โดยเป็นการวิจัยเชิงคุณภาพ ผ่านการสังเกต การสัมภาษณ์เชิงลึกและการสนทนากลุ่มกับผู้ให้ข้อมูลหลัก โดยผู้ให้ข้อมูลหลักแบ่งเป็น 3 กลุ่ม คือเจ้าหน้าที่ภาครัฐ ผู้นำชุมชน นักการเมืองท้องถิ่น ผู้ประกอบการ ผู้ดูแลสถานที่ท่องเที่ยว และนักท่องเที่ยวชาวไทยที่เดินทางเข้ามาในพื้นที่จำนวน 30 คน

ผลการศึกษาพบว่า พื้นที่บริเวณ 2 ฝั่งคลองดำเนินสะดวก อำเภอดำเนินสะดวก จังหวัดราชบุรี ระหว่างหลัก 5 ถึง หลัก 8 มีถนนคอนกรีต ทั้ง 2 ฝั่งคลองและมีสะพานที่รถยนต์สามารถข้ามฝั่งได้ทั้งหมด 3 แห่ง ด้านแหล่งท่องเที่ยวในอำเภอดำเนินสะดวก มีความหลากหลายทั้งในด้านรูปแบบสถานที่ท่องเที่ยว กิจกรรม เทศกาล งานประเพณีที่จัดขึ้นอย่างต่อเนื่องตลอดทั้งปี ไม่ว่าจะเป็นประเพณีแห่พระทางน้ำ หลวงพ่อไตรรัตน์โรจน์ฤทธิ์ งานประจำปีปิดทองหลวงพ่อโต วัดราษฎร์เจริญธรรม เทศกาลองุ่นหวานและของดีดำเนินสะดวก งานย้อนรำลึกเสด็จประพาสต้น รัชกาลที่ 5 เทศกาลถือศีลกินเจ ซึ่งถือว่าอำเภอดำเนินสะดวก มีศาลเจ้าและโรงเจมากที่สุด แนวทางการพัฒนาเส้นทางการท่องเที่ยวเชิงอาหาร พบว่าสนับสนุนด้านการประชาสัมพันธ์ และการพัฒนายกระดับมาตรฐานร้านอาหาร ให้ถูกสุขลักษณะและตอบสนองต่อความต้องการของนักท่องเที่ยว ผลจากการศึกษายังพบว่านักท่องเที่ยวต้องการให้หน่วยงานที่ดูแลด้านการท่องเที่ยว หน่วยงานพัฒนาชุมชน มาให้ความรู้และความเข้าใจกับชาวบ้านในชุมชนเพื่อร่วมมือกันพัฒนาผลิตภัณฑ์การท่องเที่ยว พัฒนารูปแบบของสินค้าและการให้บริการ การสร้างความยั่งยืนให้กับเศรษฐกิจในชุมชน และควบคุมดูแลสิ่งแวดล้อมรวมถึงความปลอดภัย
