การประมาณราคาต้นทุนต่อหน่วยสำหรับการตกแต่งภายในร้านอาหาร กรณีศึกษา ร้านอาหารบุฟเฟต์ในศูนย์การค้า

Abstract

การศึกษานี้เป็นการศึกษาราคาต้นทุนต่อหน่วยของการตกแต่งภายในร้านอาหารบุฟเฟต์ กรณีศึกษาร้านฮอทพอท และร้านไดโดมอน เพื่อให้ได้ข้อมูลราคาต่อหน่วยของแต่ละหมวดงานและราคาต่อตารางเมตรของการตกแต่งภายในร้านอาหารบุฟเฟต์ในศูนย์การค้า การศึกษานี้รวบรวมข้อมูลจากร้านฮอทพอท จำนวน 5 แห่งและร้านไดโดมอนจำนวน 5 แห่งจากทั่วประเทศ ที่ทำการตกแต่งระหว่างปี พ.ศ.2556 - 558 มีขนาดพื้นที่ร้านในช่วง 195-300 ตารางเมตร โดยนำแบบแปลนและข้อมูลงบลงทุนมาวิเคราะห์แสดงผลการศึกษาในรูปค่าเฉลี่ยและร้อยละ (ขึ้นกับชนิดข้อมูล) จากการศึกษาพบว่าหมวดงานวิศวกรรมระบบเป็นหมวดงานที่มีค่าใช้จ่ายสูงสุด โดยเท่ากับ 7,248 บาทสำหรับร้านฮอทพอท และ 8,289 บาทสำหรับร้านไดโดมอน ส่วนราคาค่าเฉลี่ยตกแต่งภายในเท่ากับ 23,140 บาทต่อตารางเมตร สำหรับร้านฮอทพอท และ 30,103 บาทต่อตารางเมตรสำหรับร้านไดโดมอน ข้อมูลเหล่านี้อาจสามารถนำไปใช้ในการประมาณราคาและศึกษาความเป็นไปได้ของโครงการร้านอาหารบุฟเฟต์ในศูนย์การค้าต่อไป This study was to analyze unit cost of interior design of buffet restaurants, using Hotpot and Daidomon as case studies, in order to obtain the unit cost of each work and the cost per square meter of interior design of buffet restaurants in shopping centers. The study collected data from Hotpot and Daidomon, five branches each, in Thailand which were decorated between 2013 to 2015, with the restaurant area of 195 to 300 square meters. The construction drawing and investment cost of those projects were analyzed and the results were shown as means and percentages depending on the type of data. The study demonstrated that engineering system work was of the highest cost, 7,248 and 8,289 bahts for Hotpot and Daidomon respectively. The average interior design cost were 23,140 and 30,103 bahts per square meter for Hotpot and Daidomon respectively. These findings can be possibly utilized in the cost estimation and feasibility study of buffet restaurant projects in shopping centers in the future.
